Located in the vibrant Bethnal Green area of London, Bistrotheque is set in a refurbished first floor factory. This now culinary institution of the East End, was founded by Pablo Flack and David Waddington in 2004 and operates with their team, Clive Gergory, general manager and head chef, Blaine Duffy. Technical Services supplied and installed a new bespoke open plan ADISA kitchen to cater to the increasing demand the restaurant was experiencing.
We undertook a complete turnkey project which started with removing the existing kitchen and its encompassing stud wall work finishes. The renovation then included creating floor plinths for the new equipment, installation of the cooking suites, new electrical and mechanical services, coordinating floor gullies and a new anti-slip floor finish, and applying the handmade tiles chosen by the owners. The ADISA periphery and serving pass was created in exposed high grade stainless steel to continue the desired industrial appearance of the restaurant.
The project was originally planned to be a 2 weeks program of works, however understanding the urgency of the project and attempting to minimise downtime for the restaurant, we completed the project in 7 working days.
The redesign has sped up the entire process of cooking dramatically, from taking the ingredients out of the fridge right through to plating. This has allowed the restaurant to increase the number of overall covers and deliver fresher food to their customers. Bistrotheque’s investment in their new kitchen has lifted all elements of the food offer, the inspiration of the staff and truly fascilitated taking the restaurant to the next level.
